Umami Pate

Vegan Umami Pate

 
 
I based this mixture off of my favorite veggie burger mix, making changes to lean to a more umami flavor.  In the last week I have used this mixture in a multitude of soups, sauces, sandwiches, and casseroles.  It has given a more toothsome feel to them all.  In the coming weeks I'll be posting many of those recipes.
 
Ingredients:
 
1/2 cup onion diced
1 tsp garlic powder
1 TB sesame oil
2.5 TB ground flax seed + 1/2 cup warm water
1 cup cannellini beans
1 cup oat flour
1 1/2 cup breadcrumbs
2 grated celery stalks
1/2 cup sunflower seeds
1 TB soy sauce
1 1/2 tsp chili powder
1 tsp cumin
1tsp oregano
 
Directions:
 
  1. Prep the flax seed and water and let sit for ten minutes.
  2. In a medium size microwave save mixing bowl combine the onion, garlic powder, and sesame oil and microwave for 1 minute. 
  3. Add the cannellini beans and mash with a potato masher.
  4. Add the oat flour, breadcrumbs, celery, sunflower seeds, soy sauce, and flax seeds and combine well.
  5. Add the broth powder and spices and combine well.

This should produce 26 oz of pate.  I store mine in the refrigerator in a ziploc bag and use it throughout the week.

Reuben Style Veggie Burger
So, today I made this veggie burger with Reuben trimmings.  Yummmmmmy.

INGREDIENTS:

2 slices rye bread
1 veggie burger patty shaped into a square the same size as the bread
Refrigerator sauerkraut (recipe follows)
Creamy Russian dressing (recipe follows)

REFRIGERATOR SAUERKRAUT:

INGREDIENTS: 

1 head white cabbage, shredded
boiling water to cover
1/2 cup vinegar
1/2 cup cold water 
1-2 tsp caraway seed
1-2 tsp paprika
2 tsp sea salt

DIRECTIONS:

Put the shredded cabbage in a large mixing bowl and cover with the boiling water and a lid to cover for 5 minutes.  After you have blanched the cabbage, run cold water over it until it is cool.  Add the additional ingredients and stir well.  Refrigerate and serve cold. 

CREAMY RUSSIAN DRESSING:

INGREDIENTS:

1 batch tofunaise 
1.5 tsp celery seed
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp ketchup

DIRECTIONS:

Stir spices into tofunaise.

Idea! Veggie Burger "Meatballs"




Spaghetti with "Meatballs"



I found this awesome vintage Aladdin thermos at Savers for a buck!  Perfect for hot lunches.

I had a great idea yesterday.  I took my favorite veggie burger recipe and instead of shaping patties, I shaped little meatballs.  I browned them in olive oil and then added them to spaghetti sauce and had a huge bowl of spaghetti and meatballs.  Yum.

I'm thinking meatball sandwich next . . . . .

Mini Veggie Burgers and Tofunaise

I am in love with this veggie burger.  So far I have had it with guacamole and tofunaise, lettuce, and tomato.  Divine.  And, I have a lot more plans for this veggie burger . . . . 

I halved the recipe and made these into 8 mini burgers using Father Sam's mini whole wheat pita pockets as buns.

But first a recipe for tofunaise, a very important condiment for my vegan lunchbox.
